How I Made It:

1 cup 1:1 Gluten Free Flour
3/4 cup All Purpose Gluten Free Flour
175g Cane Sugar
1 tsp Baking Powder(heaped)
1 cup Sparkling Water
2/3 cup + 1 tbsp Veg Oil
Splash Vanilla Extract

Bake 355f 40 mins


Strawberry Compote(I made a half recipe):

1lb Strawberries
2 tbsp Sugar
3 tbsp Water

Bring all ingredients to a boil, reduce heat to med and simmer until thickened!
